  Scout notes: you've come a long way, sushi. a couple of decades ago, the cuisine was relegate.. read mored to fringe food territory, amounting to little more than a quirky californian curiosity and the punchline to jokes on " clarissa explains it all ". sushi's status as a culinary oddity is now hard to fathom given the boom of japanese restaurants denver has witnessed in the intervening years, but back then it was nearly impossible to find the stuff in landlocked colorado. with seventeen years of meticulously crafting rolls under its belt, japon deserves credit for being a big part of the denver sushi vanguard. nobody can lay claim to the old-school sushi crown in this city like owner miki hashimoto, a man so smitten with smelt that you'll still find him slicing away in the sushi bar. aside from your usual suspects—sushi rolls, tempura, fresh sashimi—japon boasts a handful of distinctive menu items, including some in-house creations you won't find anywhere else. our favorite is a bit of sushi surf and turf called the montana roll. it's filled with spicy shrimp and avocado, topped off with lightly seared angus beef that melts on your tongue. looking for something authentically japanese? try the executive lunch or dinner, a traditional multi-course meal known as a kaiseki ryori . it's a great way to experience a variety of dishes on the cheap. however, if you ask around there is one thing people are positively fanatical about here at japon: the miso ramen noodle soup. only available during lunch and weekend late night happy hours, this ramen is a far cry from the 25c dehydrated packets which were the sole source of sustenance during your freshman year. this bowl comes loaded with pork, a poached egg, bean sprouts, corn, bamboo, and green onions. after a complete remodel six years ago, the interior at japon boasts a cool loft-meets-luxe feel. exposed steel ductwork and brick wall segments contrast with the refined plating and a trail of purplish blue floor lights which dot the path through the restaurant. on the back wall behind the sushi chefs, panels of swirling, bubbly water are illuminated in a mesmerizing array of alternating colors that will have you humming "under the sea." menu highlights: miso ramen noodle soup, $9.25 montana roll, $12.95 spicy yellowtail roll, $6.90 executive lunch/dinner, $17/$28 hours: monday through thursday, 11:30 a.m. to 3 p.m., 4:00 p.m. to 10:00 pm. friday, 11:30 a.m. to 3 p.m., 4:00 p.m. to 11:30 pm. saturday, 12:00 p.m. to 3 p.m., 4:00 p.m. to 9:00 pm. sunday, 12:00 p.m. to 3 p.m., 4:00 p.m. to 9:00 pm.
