In 1986 the town Fort Collins was starved. They needed some good Mexican Food - and man did they deserve a decent margarita. Armed with the knowledge.. read more of the Yucatan; Andre and Stephen Mouton, along with childhood friend Pat Mcgaughran, formed a partnership. And in the summer of 1986 - with empty pockets, a handful of black beans, and a margarita held high - opened the doors to the Rio Grande on College Avenue in Fort collins. The team was right: the thirst for a good margarita and fresh, healthy Mexican food was overwhelming. The Rio legend had begun. Over the next 20 years the Rio expanded throughout Colorado and just recently crossed borders back to the teams hometown of Austin, Texas. And today the tradition continues with 7 great locations
