In 1967, a new barbeque restaurant called the Brisket House was opened on Pierce Street , near downtown Houston . It was a new venture for the grandsons of Greek Immigrant, H.D. Pappas, and the start of a restaurant company that would grow significantly over the next 40 years. Chris and Harris Pappas, having learned from their grandfather, knew the secret to good food was quality. Chris and Harris began to slow-smoke their ribs and brisket, so they were always tender, juicy and delicious. They also made sides fresh, from scratch, every day, and they created a barbeque sauce recipe that was smoky and delicious. In 1996, The Brisket House changed its name to Pappas Bar-B-Q. By 2005, six locations were scattered across Houston and one location was open in Dallas. Today, Pappas Bar-B-Q is a favorite for slow-smoked, lean and juicy Texas barbeque with all the trimmings.
