His original intent was to build a place that wasn’t fake or contrived. A place that was as comfortable and long-wearing as his favorite pair of jeans. With a love for the variety of foods he enjoyed in the Southwest, Danny York set out to bring that same melting pot of flavors to his "place" in an authentic, uncomplicated and genuine way. Specializing in steaks, ribs and fajitas; Danny created a place that was relaxed, natural and a bit of a change from the ultra-corporate roadhouse themed restaurants that seem to be the norm. "In the Southwest, a migration of cultures has come together," notes York. Santa Fe Cattle Co.'s menu is a melting pot of those influences. From South of the Border come fajitas, quesadillas, and smoky chipotle peppers permeate many of the dishes from barbecue sauce to salad dressings. A Teutonic influence comes from German immigrants who settled in Texas in the late 1800s. A hearty sausage on the menu hails from the historic German migration town of Fredericksburg, TX. Santa Fe Cattle Co. also serves Shiner Bock beer, brewed in Shiner, TX; and It's that combination that he believes makes Santa Fe Cattle Co. more than just a steakhouse. It allows our menu to have a broader range and more authenticity. And so he began.
