CATCH US AT CABO<P>The warmth of the waters, the beauty of luxuriant beaches, the abundance of freshly prepared seafood and the mastery of intoxicatingly mixed beverages are the motivation for the new Cabo Seafood + Bar in Stone Oak at 20626 Stone Oak Parkway.<P>Capturing the seafood flavors of Mexico, Spain, Greece, Japan, Hawaii and the Texas Gulf Coast, Cabo's culinary team have taken time-honored seafood staples and infused them with vibrant, modern presentations that pay epicurean homage to original recipes.<P>The menu is simple. Fresh fish and crustaceans from the sea paired with simple ingredients and spices. Starters include Ceviche Tostadas, Tuna Tartar Tacos and Beer Battered Red Snapper Tacos that are perfect for a fast snack or enjoyed with a bar beverage.<P>Carpaccio's of octopus, shrimp, yellow tuna and swordfish join savory seafood finds at a fresh seafood bar where guests may select oysters of the day from an icy display on the outdoor patio. Facing west, party patrons will gather on the patio each evening to toast the setting sun with a signature Cabo Sunset, a specialty drink that conjures up midnight walks on a balmy beach.<P>Chef Rodrigo Garcia Ugartechea brings skills to the Cabo culinary table with training in culinary management, advanced gourmet cuisine and European pastry and chocolate degrees from DCT Business Management School in Vitznau, Switzerland. Born in Mexico City, he received his Technic Certificate in Culinary Arts from the Escuela Superior de Gastronomia y Hosteleria in Toledo, Spain. Prior to accepting the position as executive chef for Cabo, Ugartechea worked as sous chef at Cafe des Artistes with Chef Damien Watel.<P>Through years of combing beach food stands and seaside restaurants on summer vacations in many parts of the world, owners Maria and Juan Pablo Mendez have captured the coastal essence of seaside dining destinations.
